Do You Use Nonstick Pans to Cook Food?

The first non-stick pans were made using a coating of Teflon (polytetraflouroethylene or PTFE). PTFE was invented by accident by Dr. Roy Plunkett in 1938, while working for a joint venture of the DuPont company. The substance was found to have several unique properties, including very good corrosion resistance and the lowest coefficient of friction of any substance yet manufactured. PTFE was used first to make seals resistant to the uranium hexafluoride gas used in the Manhattan Project during World War II and was regarded as a military secret. Dupont registered the Teflon trademark in 1944 and soon began planning for post-war commercial use of the new product.

The use of Teflon is to minimize food sticking to the pan surface. Here are advantages and disadvantages to such a coating. Coated pans are easier to clean than most non-coated pans, and require little or no additional oil or fat to prevent sticking.

There is a potential danger in the use of PTFE-based coatings. While decomposition of the coating does not occur at normal cooking temperatures (below about 465 °F/240 °C), overheating can produce decomposition products that are toxic to humans,

Modern non-stick pans do not necessarily use Teflon. Other non-stick coatings for pans have since been invented. For example, a mixture of titanium and ceramic can be sandblasted onto the pan surface.

The main difference in quality levels of the coatings is in the formulas of the liquid coating, the thickness of each layer and the number of layers used. Higher quality nonsticks use powdered ceramic or titanium mixed in with the nonstick to strengthen them and to make them more resistant to abrasion and deterioration.
